This is a basic recipe, that the French fur traders called Voyagers, used on their northern trading routes many many years ago. It is a good recipe to experiment with at home.
You can add most anything to this bread. Some favorites are, cinnamon, dark molassas, brown sugar, raisins, or any fresh fruit that you can find along the way. You can make several for breakfast and wrap them in a cloth for later in the day. I like to use the little jams & jellies that are at the table in restaurants.
Ingredients
Half cup flour
1 teaspoon baking powder
Dash of salt
Water
Directions
Mix ingredents with a few tablespoons of water. Bake about 20 minutes over low heat, covered, flipping once. You can make one "loaf" or several smaller cakes. Serve with jam, honey, maple syrup, butter, ect.
Using milk instead of water adds flavor and makes the loaf browner. An egg will make the loaf richer. A tablespoon of oil will make the loaf flakier. A little sugar will add flavor and crispness. I like to mix a little wheat flour into my white flour and then mix all the dry ingredents at home & store it in gallon sized zip bag, this way I 'll just scoop out the amount I need and mix in the water.
I use a propane stove so cooking at a "simmer" is very easy. Even with a non-stick pan I like to use a dab of butter or oil.
