Simple Meal Plans

When I am on the road I typically cook breakfast, eat lunch in a roadside restaurant and cook my supper in camp. My camp cooking tends to the very simple.

Breakfast is usually something that can cook relatively unattended while I break camp. I usually prepare dinner after I've completed my camp setup however I've found that writing up my journal is a wonderful activity to pursue while supper is cooking. This means that once again I am looking for simple and something that doesn't require my absolute attention while it cooks. I also like meals where I can use longer and shorter cooking times. I know that this sounds funny but if you've ever experienced the agony of losing an important thought that you wanted to write down in your journal then you would know exactly what I mean and why this is important to me! (grin)

Simple meals could include stopping at a grocery store and grabbing the ingredients needed for an excellent deli sandwich lunch. Alternatively I might pick up five or six cobs of corn on the way into camp and eat all of them for dinner with some water to chase them down.

The intent of the section that follows is to share some simple meal plans. If you have a favourite but simple meal that you would like to share then please drop me an email so that I can include it in this section too!
